Guacamole

With all the Friendsgivings and Thanksgiving going on, many people are eating 2-3 traditional turkey dinners. So to entertain our palettes at work, we decided to have a Mexican themed Thanksgiving fiesta. I loved this idea, naturally. What's not to love about Mexican food? Carbs, cheese, guacamole all over everything.....muy bien. I'm kind of a guacamole fan so I've spent some time and perfected my special guacamole recipe. Before I share this recipe, can we all take a moment and marvel how beautiful fresh, ripe Haas avocados are? Gorgeous!




Jenn's Super Duper Amazing Guacamole
(serves 10+ or a couple hungry people)

6 ripen avocados, large dice
2 cups pineapple, small dice
1 tomato, medium dice
1 small red onion, small dice
3 cloves garlic, minced or grated
1/2 jalepeno, seeds removed, small dice
juice of 1 lemon
juice of 2 limes
dried chilli powder
salt and fresh ground black pepper

1. Mash all but one avocado until smooth. Reserve large dices of one avocado to add later, to create a chunky texture, if desired.
2. Add pineapple, tomato, red onion, garlic, jalapeno and the lemon and lime juice. Be sure to remove the seeds from the tomato and squeeze out some of the juice. It will make the guacamole too loose otherwise.
3. Add chili powder to desired spice level. Season with salt and freshly ground black pepper.
4. Bring to your friends' potlucks, dinners, lunches and be everyone's favorite guest!
