It tasted pretty good but I wasn't completely satisfied with how everything turned out. I'll definitely had to try again and tweak the dish a bit.

Rainy Day Salmon
Since it rained and rained and rained this weekend, I stayed in and slept, and slept, and slept. I woke up, of course, to eat. I decided to cook on Saturday night and actually ventured outside to get groceries. It was quite a sad sight outside--broken abandoned umbrellas everywhere. After a slightly crazy night of sake bombs, bad sushi and karaoke on Friday night, I wanted to keep the meal healthy. I decided to make pan seared salmon, mashed sweet potatoes with shallots, and sauteed leeks and mushrooms. Here's a peek:
