Tri Tip with Herb Pesto and Summer Vegetables

My herbs have been growing like crazy for the past couple months. It's at the point that I need to use them rather than being scared to snip some leaves. The purple basil was particularly tall so that was my inspiration for Sunday night's dinner.


I made tri tip with herb pesto (purple basil mixed with cilantro and mint) and a medley of summery vegetables: fresh corn, red spring onions and avocado. Super simple and quick meal to make.  Generally during hot nights, I go for easy meals and try to lighten it up a bit. I happen to love this dish a lot. A bonus: leftovers make a fantastic steak sandwich the next day.
