Roasted Sea Bass

People always say the quality of fresh ingredients on the West Coast is unbeatable. Those people are absolutely right. This weekend, I had the pleasure of enjoying ocean-to-table dining. It was a successful fishing day for the men in my family and they came back with two of these guys and a tiger shark.  This seas bass was caught earlier in the day and was probably the best sea bass I've ever tasted. That's a bold statement for me. I never declare anything the "best." Fresh seafood is the only way to go. If you're still purchasing and eating frozen anything--shame on you!

Marinated with garlic, scallions, soy sauce, oyster sauce, sugar, salt and pepper, this roasted sea bass was omg good.  Served with green lettuce fresh herbs, cucumbers, rice noodles--wrapped in rice paper and dipped into an oyster coconut sauce. This dish is a personal favorite that I can't get enough of.
