Turkey Chili and Cornbread

I have been craving chili for some time and finally decided to make some yesterday. To undo all the damage from the weekend (think fried mac n cheese, pork belly donuts and fries) I tried hard to make it healthy without sacrificing on taste. I think I succeeded.


Chili ingredients: ground turkey, yellow onion, crushed tomatoes, black beans. red bell pepper, tomato sauce, lime zest, lime juice, chili powder, paprika, cinnamon, tapatio, soy sauce, sugar.

Served with goat cheese, scallions, blue corn tortilla chips (for crunch) and whole grain cornbread.

I'm generally not a fan of prepackaged mixes, but I used Bob's Red Mill Cornbread Muffin Mix and was really pleased. I made sure to check the ingredients on the mix package first. It contains whole grain corn meal and whole wheat pastry flour along with other natural baking ingredients. No weird preservatives. During the actual preparation, I added whole corn, honey and the Japanese spice  Nonami Togarashi. The cornbread was moist and not too sweet. Success.
